From now till Mar 2, add some flare into your morning rituals with Sunrise at Air CCCC, in a collaboration with Le Matin. This breakfast experience has introduced an enticing lineup of freshly baked goods, available Friday to Sunday from 8am until sold out.
Le Matin, helmed by homegrown chef Mohamed Al-Matin, is well-known for their creative pastries that are unlike anywhere else. Chef Al-Matin brings that to Air CCCC, while incorporating the Air CCCC sustainability ethos into the recipes.
Mushroom XO and cheese toastie
Signature bakes include the Garden Herbs and Charcoal Chicken Sausage Roll ($11), a charcoal-grilled flaky puff pastry filled with homemade chicken sausage, mango chimichurri and herbs freshly picked from AIR’s Garden. For a sweet indulgence, the Banana Bread ($5.50) combines sourdough banana bread, Indonesian cashew nuts, dark chocolate chips, vanilla crumble and banana skin caramel.

Gula apong kouign aman
The menu also features beloved staples such as the Gula Apong Kouign Aman ($6), a flaky pastry layered with Gula Apong sugar from Sarawak, and the Kenari Nut Twice-Baked Croissant ($7), filled with rich Kenari nut cream and topped with Kenari nut flakes. The Mushroom XO and Cheese Toastie ($10) offers a vegetarian-friendly savoury bite with mozzarella, gruyere, caramelised onions, and fermented mushroom duxelle encased in homemade brioche. Made with mushroom trimmings and AIR’s signature Mushroom XO butter, it embodies the kitchen’s commitment to a minimum-waste ethos.

Kenari nut twice-baked croissant
