Guoco Tower’s newest tenant stakes a bold claim as Asia’s first and only farm-to-table cheese boutique and bistro, but can it entice Singaporeans to sample new varieties, savour cheese-forward dishes and even pair cheese with tea? 

M&T, which stands for Monts & Terroirs, is a pilot concept by Sodiaal, a French dairy cooperative representing over 8,500 farms and 15,000 farmers. The three-month-old boutique brings French mountain cheeses, produced only by Sodiaal, directly to consumers in Singapore.

All of Sodiaal’s cheeses hold certifications like Protected Denomination of Origin (PDO) and Protected Geographical Indication (PGI), which highlight the cheeses’ unique origins, the dedication of the cheesemakers, and the meticulous process of bringing the cheeses to their best maturity and revealing their aromatic richness. The boutique’s inventory includes everything from the popular Comté to the Ossau-Iraty, made from sheep milk from Basque and the Béarn regions in Pyrenees.

For those working in the CBD, M&T is just a hop and a skip away in Guoco Tower. Open Monday through Saturday, the 50-seater venue offers all-day dining with menus for lunch, tea and dinner. While the dine-in bistro only begins seating diners at 11.30am, the boutique offers grab-and-go options from 8.30am on weekdays.

Leading the culinary team at M&T is French chef Nicolas Drouglazet, who has over 24 years of experience in kitchens across France, Asia and Saudi Arabia. Prior to the Covid-19 pandemic, Drouglazet was the executive chef of So France.

The Croque Monsieur ($18++) makes for a light yet satisfying lunch; this M&T signature features Parisian ham, melted Comté cheese and a homemade béchamel sauce. For something more decadent, treat yourself to the grass-fed beef burger ($26), served with Comté cheese and caramelised onions; there’s also the grass-fed beef ribeye ($38) with a choice of red wine or black pepper sauce. 

On the dinner menu is a whole seabass ($48++) for sharing, with an orange cream sauce and roasted fennel, alongside options like the duck confit ($32++) and slow-cooked lamb shank ($38++) with a Comté crumble. The cordon bleu ($34++), also available only for dinner, features crispy breaded chicken stuffed with French ham and melted Comté cheese. It’s served with French fries, mesclun salad and a rich, homemade cheese sauce.

The throughline, of course, is M&T’s selection of sharing boards. The French Mountain 5 Cheeses Selection cheese board ($36++) is perfect for three to four people, and is available all day. It features a curated assortment of cheeses, each offering distinct flavour profiles, paired with a bread and butter basket, as well as nuts and jams. Couples can opt for the smaller French Mountain 3 Cheeses Selection ($24++), while larger parties can opt for the Mixed Board 5 French Cheeses & 5 Cold Cuts ($48++), which is good for up to six diners.
